Healthy Coastal Coleslaw

I’ll never forget the first time my sweet friend made this dish for my family. Well, actually I don’t remember all the details. I’m pretty sure I was knee deep in babies and barely awake but it made quite an impression and became a staple!
Sweet, citrus-y, crisp & salty.
Just last week we packed it for a beach day! It was so cool and satisfying.
Yes. My kids eat it and LOVE it.

The original recipe will always be a treasure for me because of who introduced me to it but I had to make some heal-thy adjustments. Same amazing flavor. More veggies. Less junk.
Ingredients for Coastal Coleslaw:
- 1 head of cabbage (thinly shredded)
- 4 stalks of celery (thinly sliced)
- 1 bunch of cilantro (chopped)
- 2 green onions (sliced)
- 1 c. almonds (chopped)
- 5 mandarin oranges (peeled and segmented)
Shred, slice, peel & chop. Set aside while you make the sauce.
Sauce:
- 3/4 c. Coconut Aminos
- 1/4 c. Red Wine Vinegar
- 1 TB Honey
- 1 TB Avocado or Olive Oil
- 1 tsp. TJ’s Green Goddess Seasoning
- 1 tsp. salt
- A pinch of Red Pepper Flakes
Simply stir together!
Finally, toss the coleslaw with sauce just before serving.

You really can’t mess this up. Throw it together for a potluck. Serve it as a side. Put it in a wrap. It’s definitely a must try!
